Aged wines are highly sought after by wine lovers for their complex and nuanced flavor profiles. As a wine ages, it develops a unique character and depth that is often not found in younger wines. The aging process also helps to soften the tannins and reduce the acidity, making the wine smoother and more enjoyable to drink.

Griffin Dark Side barrique

Portugizer, a variety usually made as a young autumn wine, was aged for two years in oak barrique barrels, which is a paradox. This is why it got the name Dark Side. Its distinct fruitiness and freshness are deepened by oak tannins, which give it exceptional elegance and deliciousness.

Cherry, black currant, Raisins, Cocoa

Vinification:

The grapes are picked by hand into crates and refrigerated at 1⁰C. After cooling, grapes are sent for light destalking and remain on the skins for two days on cryomaceration. After soft pressing, the decanted must is racked and fermented at 15⁰C in inox. The wine remains in stainless steel tanks on maturation for 12 months, with bâtonnage carried out every ten days.

The Portugizer variety is aged in oak barrels for six months, which is paradoxical for a variety usually drunk as a young autumn wine. This is where the name comes from, the Dark Side of Portugizer. Its marked fruitiness and freshness are enhanced by oak tannins, giving it a very fine elegance.

Unique and mature

Chardonnay Sur lie

This Chardonnay is undeniably unique. Aged in oak barrels for a year on the Lees enables production without adding sulfites. The aging on Lees process gives this wine a solid and entire body that lasts while retaining the variety’s fresh and fruity nature.

Vanilla, honney, butter, coconut, citrus

Vinification:

The grapes are picked by hand into crates and at once refrigerated at 1⁰C; after cooling, grapes are sent for light destalking, and they remain on the skins for three days for cryomaceration. After soft pressing, the decanted must is racked and fermented at 16⁰C in the barrel. The wine obtained remains in barrique barrels on the lees with continuous movement for 24 months.

Chardonnay sur lie is the flagship of the Griffin winery. Unique, expressive, strong and full-bodied with a lasting aftertaste. After two years of aging in barrique barrels without the addition of sulfur, we got a rich wine, but the freshness and fruitiness of the variety was still preserved.
