Our winery’s hallmark has been an unwavering commitment to quality from our beginnings.
With passion, patience, and balance, we become recognizable by our premium sparkling wines.
We were among the first to introduce cryomaceration technology that enhances the wines with floral solid and fruity bouquets.
Our vineyards are located on the highest positions in Plešivica, over 400m above sea level, facing south, allowing us to produce the finest premium grapes labored to perfection.
This gives Griffin the distinction of creating some of the world’s best quality still and sparkling wines.

The griffin character from our logo originates from the family coat of arms from 1759, which the family received with the noble title granted by the Austro-Hungarian empress Maria Theresa.

 

NEW technologies

Cryomaceration

A winemaking technique in which the crushed grapes are held at zero temperatures to weaken the cellular structures in grape skins. This is done before fermentation to allow for more critical compound extraction l, leading to increased stability and flavor development. Low temperature also turns off microbiological activity undesirable in wine.

New premises and a larger tasting room

In addition to a small intimate tasting room, we have recently opened a new, modern tasting room that can accommodate up to 60 people for wine presentations and events. We are also able to accompany guests on our covered terrace with a beautiful view of the valley and vineyards

griffins are mythical creatures with the head and wings of an eagle and the body of a lion and can be found in all the great mythologies of the world as guardians of treasures. Greek myth tells us Dionysus relied on griffins to guard his ever-flowing wine bowl.

 

The original document handwritten in Latin found in an old book on the family attic tells us about the long tradition of growing vines. February 25, 1773 is the date by the signature of Count Erdody, who gives the Ivančić family a license to plant a vineyard.

The fact that our winemaker Krešimir Ivančić is a perfectionist and a man who lives for wine gives us the opportunity to progress and create world-class wines. Although Krešimir is not an oenologist by profession, he studied and consulted with the best experts on the market and acquired knowledge at various training courses. His passion for knowledge and quality led him to the title of sommelier and to the status of a regular member of the expert jury at international wine contests such as Mundus vini in Germany.
